Redis version v3 -> v5

Is it possible to select the version of redis extension that is installed in base image?
Currently it's v3 and actual (for 2021) is v5...

I'm going to submit a big PR request soon that keeps support for 7.3, but adds 7.4 and 8.0.
One of the things I've updated is the redis extension to v5.3.+

We'll see, there has been much activity in terms of an official response. It's hard to tell what the status of this project is or if there is a plan within the organization to do anything, I'm hoping my efforts will at least get things moving.
