iOS 27 scene-based life cycle support

Issue

Starting from Xcode 27, it is required to transition to scene-based life cycle methods in order to build with iOS 27.

Currently, the app crashes because react-native-app-auth still references appDelegate.window.rootViewController.view.window here:

react-native-app-auth/packages/react-native-app-auth/ios/RNAppAuth.m

How to reproduce?
Build with Xcode 27 and launch the app on e.g. an iOS simulator. Trigger authorizeWithConfiguration and watch the app crash.
