Workspaces: Expression editor doc updates

Description

Adds section on line plot expression editor. Adds info on how to access config (including nested configs), summary metrics. Adds examples (mostly dummy). Lists available operators, constants, etc.

Questions:

1. The core source code suggests that available math operations are from the Javascript Math library. If this is true, should we call that out and link to those docs, too?
2. Can apply the same expresssions to the x axes and y axes? Spot checking would seem to suggest so...
